Usually, I make it out of left-over lasagna, but this post will have you making it from scratch. <br><br>Lasagna soup is very easy to make.  It is a combination of tomato sauce, noodles, plant-based ricotta (often tofu), and whatever cheeses I have on hand. Whether I have homemade or store-bought plant-based mozzarella and parm, I make sure they are in there.  Though I did not list this, you may put any veggie that you love in lasagna in this soup, but when making it from scratch, I usually just make it plain and we&#8217;ll have a side vegetable or veggies. <\/p>\n\n\n\n<p>This dish is really a combination of my <a href=\"https:\/\/simplepreparations.com\/index.php\/2022\/08\/30\/tomato-sauce\/\" target=\"_blank\" rel=\"noreferrer noopener\">tomato sauce<\/a> and grounded <a href=\"https:\/\/simplepreparations.com\/index.php\/2020\/03\/24\/beef-substitute\/\" target=\"_blank\" rel=\"noreferrer noopener\">beef meat substitute<\/a> with noodles and tofu ricotta. It is super easy if I have all of these ingredients already made.  Just saut\u00e9 the meat substitute with onions, garlic, and pepper and add the broth (made from water, liquid aminos, and <a href=\"https:\/\/simplepreparations.com\/index.php\/2023\/11\/03\/no-chicken-broth-powder\/\" target=\"_blank\" rel=\"noreferrer noopener\">no-chicken broth powder<\/a>)! As soon as I am able to get a photo of it, I will remove the recipe for the tofu ricotta from this write-up, but adding it in now because I have yet to post the recipe.<\/p>\n\n\n\n<p>I really hope you like this as much as I do.  Without further ado, here is the recipe &#8230;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong> Lasagna Soup (<strong>Plant-Based<\/strong>)<\/strong><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h3>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>For the Soup:<\/strong><\/h4>\n\n\n\n<ul>\n<li>1 tablespoon olive oil<\/li>\n\n\n\n<li>1 medium onion, diced<\/li>\n\n\n\n<li>3 cloves garlic, minced<\/li>\n\n\n\n<li>1 green bell pepper, diced<\/li>\n\n\n\n<li>2 cups plant-based ground beef substitute <em>(See <a href=\"https:\/\/simplepreparations.com\/index.php\/2020\/03\/24\/beef-substitute\/\" target=\"_blank\" rel=\"noreferrer noopener\">recipe<\/a>)<\/em><\/li>\n\n\n\n<li>1 tablespoon onion powder<\/li>\n\n\n\n<li>1 tablespoon garlic powder<\/li>\n\n\n\n<li>1 tablespoon fresh cilantro, finely chopped<\/li>\n\n\n\n<li>1 tablespoon liquid aminos<\/li>\n\n\n\n<li>2 teaspoons pink Himalayan salt <em>(to taste)<\/em><\/li>\n\n\n\n<li>1 teaspoon dried Italian seasoning<\/li>\n\n\n\n<li>1 teaspoon dried basil<\/li>\n\n\n\n<li>1 teaspoon paprika<\/li>\n\n\n\n<li>1\/4 teaspoon crushed red pepper flakes <em>(optional)<\/em><\/li>\n\n\n\n<li>1 can (28 ounces) crushed tomatoes<\/li>\n\n\n\n<li>1 can (4 ounces) tomato paste<\/li>\n\n\n\n<li>1\/3 cup honey <em>(or agave nectar\/cane sugar, to taste)<\/em><\/li>\n\n\n\n<li>3-4 cups water<\/li>\n\n\n\n<li>3-4 cups no-chicken broth<\/li>\n\n\n\n<li>2 teaspoons fresh lemon juice (optional)<\/li>\n\n\n\n<li>1 tablespoon nutritional yeast flakes <em>(or plant-based parmesan)<\/em><\/li>\n\n\n\n<li>1 package lasagna noodles, broken into pieces<\/li>\n\n\n\n<li>1-2 cups plant-based mozzarella<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>For the Tofu Ricotta<\/strong> <\/h4>\n\n\n\n<ul>\n<li>10 ounces firm tofu, drained<\/li>\n\n\n\n<li>\u00bd cup plain soybean milk<\/li>\n\n\n\n<li>1 teaspoon olive oil<\/li>\n\n\n\n<li>2 tablespoons nutritional yeast<\/li>\n\n\n\n<li>1\/2 teaspoon garlic powder<\/li>\n\n\n\n<li>1\/2 teaspoon onion powder<\/li>\n\n\n\n<li>\u00bc teaspoon pure salt <em>(or to taste)<\/em><\/li>\n\n\n\n<li>1\/8 teaspoon Monk&#8217;s pepper <em>(chasteberry, to taste)<\/em><\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Instructions<\/strong><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>1. Prepare the Tofu Ricotta<\/strong> <\/h3>\n\n\n\n<ol start=\"1\">\n<li>Crumble the drained tofu into a bowl.<\/li>\n\n\n\n<li>Blend about <strong>1 cup of the crumbled tofu with soybean milk<\/strong> , <strong>nutritional yeast, garlic powder, onion powder, salt, Monk\u2019s pepper<\/strong> and olive oil until smooth.<\/li>\n\n\n\n<li>Pour the blended mixture back into the bowl with the remaining crumbled tofu.<\/li>\n\n\n\n<li>Stir into a ricotta-like consistency. Adjust seasoning as needed. Set aside.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>2. Cook the Soup<\/strong><\/h3>\n\n\n\n<ol start=\"1\">\n<li>In a large pot, heat <strong>olive oil<\/strong> over medium heat.<\/li>\n\n\n\n<li>Add <strong>diced onion<\/strong> and saut\u00e9 for about 5 minutes until translucent.<\/li>\n\n\n\n<li>Stir in <strong>minced garlic, green bell pepper, and plant-based ground beef substitute<\/strong>.<\/li>\n\n\n\n<li>Pour in <strong>liquid aminos<\/strong> and cook for 7-8 minutes, stirring occasionally, until browned and liquid evaporates.<\/li>\n\n\n\n<li>Sprinkle in <strong>oregano, basil, and crushed red pepper flakes (if using)<\/strong>, stirring for another minute.<\/li>\n\n\n\n<li>Pour in <strong>crushed tomatoes, water, and no-chicken broth<\/strong>. Stir in <strong>tomato paste<\/strong> and bring the mixture to a boil.<\/li>\n\n\n\n<li>Mix in <strong>honey, salt, cilantro, and nutritional yeast (or plant-based parmesan). <\/strong>Reduce heat and let simmer for 7 minutes.<\/li>\n\n\n\n<li>Add <strong>broken lasagna noodles<\/strong>, reduce heat to a simmer, and cook for <strong>10-12 minutes<\/strong> until the noodles are al dente but tender, not mushy.<\/li>\n\n\n\n<li>Stir in the <strong>prepared tofu ricotta<\/strong> and <strong>1 cup of plant-based mozzarella<\/strong>. Let mozzarella melt for about 2 minutes.&nbsp; Then, taste and adjust seasoning as needed.<\/li>\n\n\n\n<li>Sprinkle the remaining <strong>plant-based mozzarella<\/strong> over the hot soup, cover, and let it melt.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>3.
