Eggy Avocado Toasts

This is a very simple preparation that I thought would be quick to put on Simple Preparations at the start of this year 2025. Happy New Year, everyone! May the Lord help us to be happier and healthier in Him in the coming year!

Avocado Toasts with a fried egg is something I was craving a few days back and I decided to make my version of it. I started making this last year and am hooked. It’s so simple and so easy to make that any time I have an avocado, this is breakfast…. just mash, season, toast, and spread! Done!

Avocadoes are so very good for us. In fact, as I mentioned under my Avocado Spread post, the avocado is a wonder food. Yes, avocados are rich in antioxidants, which protects the immune system. They contain an array of phytonutrients, such as vitamin A,  vitamin B-12, vitamin C, vitamin D, vitamin E, vitamin K, calcium, copper, iron, manganese, magnesium, niacin, phosphorus, potassium, thiamin, riboflavin, and zinc. Avocados contain fatty acids that protect the body against all kinds of disease and ailments. In particular, avocados reduce the risk of various cancers, diabetes, and lower LDL cholesterol! Avocado has anti-aging properties and protects vision by lowering the risk of macular degeneration and cataracts. Kala namak, or black salt, is a salt that tastes like eggs. It is a rock salt originally used in South Asian and Indian cooking. It even smells like eggs, having a strong sulfur smell, which goes along with its flavor of especially hard-boiled eggs. Nutritional facts include high sodium, iron, potassium, chloride, and sulfur content. It’s great for tofu scrambles, South Asian dishes, and vegan meals. You can find it in health food stores or online.

Without further ado, enjoy this recipe! One medium-sized avocado is enough for two slices of toasts until mixture is thinly spread. I tend to heap my it on my bread.

Eggy Avocado Toasts

Ingredients

  • 1 ripe avocado
  • 1/2 lemon, juiced
  • 1/8 teaspoon kala namak/black salt, or to taste
  • 1/8 teaspoon garlic powder, or to taste
  • 2 slices of toasted bread (of choice)

Instructions:

  1. Mash avocados and juice lemon. Combine about a teaspoon of lemon juice and seasonings with mashed avocado. Stir and mash until desired consistency is reached. Taste to see if mixture is eggy enough. If so, place on toasted bread. One medium-sized avocado is enough for two slices of toasts until mixture is thinly spread. I tend to heap my it on my bread.
