This is pretty much my go-to broth powder for making any chicken substitute or seasoning these types of dishes. There is absolutely no chicken in this, but they give it the name because of how it enhances the flavor of whatever you are making to be a chicken substitute.
Now with that said, I make a great no-chicken broth out of veggies already, but if I am in a pinch, this does a great job too. To make it, I use a 2:1 combo of shiitake mushroom powder and nutritional yeast. Yes, you may use only nutritional yeast, but the color of your broth will be slightly yellow instead of a more neutral color. I do love the way I do my combination and the finished color. Either way, this seasoning still taste great! I hope you will try it!
Now, without further ado, below is the recipe!
No-Chicken Broth Powder
- 1/2 c. shiitake mushroom powder or nutritional yeast flakes (or combo)
- 2 Tbs. pure salt
- 4 tsp. celery salt
- 4 tsp. garlic powder
- 4 tsp. parsley flakes
- 2 tsp. onion powder
- 2 tsp. turmeric
- 1 tsp. dried basil
Place all ingredients into a small blender, such as a Magic Bullet. Blend all ingredients until powdery. Pour into an airtight container to keep it away from moisture.
